Just play with a controller. It has always been the better choice for racing and Heat is no exception (or most nfs games anyway.) Keyboard is very bad for this kind of game because you do need subtle steering input. On top of that the game kind of simulates steering time on keyboard.

The 6 and 7 speed only seem to add two gears on top of the 5 that are both way to tall to ever see use until you have a totally maxed out car. When you have a 6 or 7 speed gearbox on a race car, compared to the 5, you tend to make every gear a bit shorter and overlap them.
